Week One Favorite (core friendly)
Teriyaki Chicken
4 oz uncooked boneless skinless chicken breast
2 tbsp teriyaki sauce (I used about 5 tbsp though)
1 tsp olive oil (I used 4 tsp-oops)
1 medium garlic clove (I used 4 tbsp minced garlic)
4 cups of spinach torn (I used 1 can of spinach)
5 oz sweet potato(es) cooked (I cooked 1 small potato)
Preheat broiler.
Coat chicken with teriyaki sauce.
Broil until no longer pink.
Heat oil in a non-stick skillet over medium-high heat.
Saute garlic.
Add spinach, season to taste and saute until wilted.
Serve chicken with potato and spinach.
I dipped my fork in FF sour cream and added a little bit of dried chives to my potato too.
